ORANGE RICE
1 c. rice, uncooked
1 c. water
1 c. orange juice
1 tsp. reduced calorie margarine
Dash of salt
1 tbsp. orange rind, freshly grated
1/2 c. fresh orange sections, seeded
In a 2-quart microwave safe casserole, combine the rice, water, orange juice, margarine and salt. Cover, microwave on High for 5 minutes. Stir in the orange rind. Turn the bowl 1/4 turn. Microwave on High for an additional 10 minutes, turning the bowl after 5 minutes. Do not uncover the bowl. Allow to set covered for an additional 10 minutes or until all of the liquids have been absorbed. Immediately before serving, fluff with a fork, add orange sections and mix gently. Serve with pride. Makes about 6 (100 calories) servings.

DIABETIC SPICE COOKIES
1 1/4 c. water
1/3 c. shortening
2 c. raisins or currants
2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. nutmeg
2 c. flour (approximately)
2 eggs
1/2 tsp. salt
1 tsp. soda
1 tbsp. artificial sweetener
Combine water, shortening, raisins, cinnamon, and nutmeg. Boil for 3 minutes. Cool. Add eggs, one at a time, and beat in salt and soda. Add sweetener, flour, and baking powder. Add flour slowly until mixture is easy to spoon. Blend all ingredients together and drop from teaspoon onto greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. Makes 4 dozen.

2 apples
1 c. orange juice

CHICKEN LIVERS HAWAIIAN
1/4 c. liquid chicken bouillon
1/2 c. chopped celery
1/2 c. chopped onion
1/2 med. green pepper, sliced
12 oz. chicken livers
1 c. pineapple chunks
1 1/4 tsp. brown sugar substitute
1 tsp. salt
1 tbsp. cider vinegar
Bean sprouts
Cook celery, onion, and green pepper in Pam sprayed skillet. Cook over medium- high heat until crisp, about 5 minutes. Add chicken liver and cook 10 minutes. Add chicken liver and cook 10 minutes. Stir frequently. Add pineapple. Dissolve salt, sugar, and vinegar with 1/2 cup water. Add to skillet. Serve on cooked hot bean sprouts.

1/3 cup chopped dried apricots
1/4 cup creamy almond butter (see Note)
1/4 cup turbinado sugar (see Note)
1/4 cup honey
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Directions
1. Preheat oven to 350°F. Coat an 8-inch-square
pan with cooking spray.
2. Spread oats, almonds, flaxseeds and sesame
seeds on a large, rimmed baking sheet. Bake until the oats are lightly toasted.
Transfer to a large bowl. Add cereal, currants, apricots and raisins; toss to
combine.
3. Combine almond butter, sugar, honey,
vanilla and salt in a small saucepan. Heat over medium-low, stirring
frequently, until the mixture bubbles.
4. Immediately pour the almond butter mixture
over the dry ingredients and mix with a spoon or spatula until no dry spots
remain.
5. Transfer to the prepared pan and press the
mixture down firmly to make an even layer.
6. Refrigerate until firm, about 30 minutes

baking soda and salt in a medium bowl.
2, In a small bowl, combine egg, buttermilk
and honey.
3. Make a well in dry ingredients and stir in
egg and buttermilk mixture. Allow batter to rest for a few minutes.
4. Set a nonstick frying pan to medium-high
heat. Drop batter by 1/4 cupfuls on to griddle or pan. Cook until the edges
begin to dry and bubbles appear in the pancakes. Flip and cook for 1-2 minutes
more.

1 whole-grain English muffin, toasted
Directions
1. Find a bowl that is about the same size
around as an english muffin and dishwasher safe.
2. In the bowl, mix together egg, cheese,
pepper, ham, ground pepper and Italian seasoning (if using). Microwave on high
for 1 minute. Turn the egg over and microwave for another 30 seconds to 1
minute.
3. Place egg on the toasted English muffin.

Dehydrated Fruit
One of the problems facing anyone trying to eat healthier, especially for someone trying to move towards eating more raw foods is the convenience factor. Raw and natural foods are so much healthier for you, but it’s not as if there are drive-through raw foods restaurants on every street corner in the country.
And of course, there’s no such thing as a raw foods snack machine, is there? So if you get hungry during the day, you’re going to have a challenge of finding something appropriate to eat if you haven’t packed any raw fruits and vegetables. And when you’re rushing around in the morning, sometimes it’s next to impossible to find the time to put together a selection of healthy snacks to take with you.
One thing to try so that you have healthy snacks available quickly is to dehydrate your fruits or make fruit leathers. Those fruit roll-ups you see in the grocery store are derived from a pretty good idea – fruit leathers. But it’s better to make your own – commercial fruit leathers are going to be loaded with preservatives and sugars – just the things you want to avoid.
When you’re switching to a raw foods diet, that doesn’t always have to mean fresh off the farm. It means not cooking foods with processes that strip all the essential vitamins, amino acids and enzymes from them. Drying fruit is a great way to add variety to your diet and make yourself tasty snacks of dried fruit or fruit leathers.
It’s not hard to do. There are recipes and inexpensive food dehydrators on the Web. These are also great snacks to pack for your kids’ lunches!
